Baking & the Holidays go hand in hand. When it comes to trying to be more mindful of what you eat it can be pretty difficult but it doesn’t mean that it doesn’t have to taste delish. Lily has been followingNicole Keshishian Modic, Kale Junkie, on instagram for quite some time and just picked up her recent Love to Eat Cookbook. Immediately, she HAD to try to make the Carrot Cake Breakfast Cookies.
Over the summer, Lily was part of a CSA through Flocktown Farms. A CSA is a Community Supported Agriculture. It’s a fantastic way to not only support local farmers but you get TONS of produce which force you to eat more veggies each week. Flocktown Farms is located in Pittstown, NJ and serves PA, NJ & NY residents. You can find other local farms that participate in CSA through the USDA’s directory if you're not in Flocktown Farms wide delivery radius. Through the CSA program over the summer, Lily received a TON of carrots which she shredded with her food processor and canned.

Another key ingredient is Local Honey from Rodale. Rodale is an organic agriculture non-profit institute just a few miles away from our Kutztown, PA headquarters.

RECIPE
For cookies:
2 cups gluten-free rolled oats
¾ cup oat flour
¼ cup plus 2 tbs ground flaxseed meal
2 tsp ground cinnamon
2 tsp ground nutmeg
1tsp baking soda
1 tsp sea salt
¾ cup unsweetened applesauce
¼ cup honey (or maple syrup)
1 egg (or 1 flax egg)
1 tsp vanilla extract
¼ cup coconut oil, melted
1 cup finely diced apple, skin on
¾ cup grated carrots
¾ cup oat flour
¼ cup plus 2 tbs ground flaxseed meal
2 tsp ground cinnamon
2 tsp ground nutmeg
1tsp baking soda
1 tsp sea salt
¾ cup unsweetened applesauce
¼ cup honey (or maple syrup)
1 egg (or 1 flax egg)
1 tsp vanilla extract
¼ cup coconut oil, melted
1 cup finely diced apple, skin on
¾ cup grated carrots

For Icing:
1 cup confectioners’ organic sugar
1 to 2 tbs water
.
Directions:
1. Preheat the oven to 375F. Line the baking sheet with parchment paper.
2. Combine all dry ingredients in a large bowl and stir.
23. Add applesauce, honey, egg, vanilla, coconut oil, carrots and apple to dry ingredients. Stir.
4. Scoop out 14 to 16 cookies and place them on parchment paper.
5. Bake for 12-13 minutes or until top/edges are set.
6. Remove from the oven and let cool.
7. Whisk confectioners’ organic sugar and 1 to 2 TBS of water in a new bowl.
8. After cookies are cool, drizzle icing on top & enjoy!
It’s not only a healthy treat for your week but it helps you eat more mindfully to see what you’re putting in your body.
